lemon asparagus risotto 🍋 one of my favorites & pretty simple recipe: • start by chopping your veggies! (trim the ends off the asparagus, dice 1/2 a yellow onion & peel/mince 3 cloves of garlic) • heat an entire carton of low sodium veggie (or chicken) broth in a pot on the stove and keep it simmering until you need it • sautee the onion in olive oil for a few minutes and then add the minced garlic for an additional 2 minutes • add 1 cup arborio rice to toast in the skillet for a few minutes •
